Veggie Cakes

Ingredients

  • 1 cup zucchini, shredded
  • 1 cup carrots, shredded
  • 1 cup riced cauliflower (If you buy frozen riced cauliflower let it thaw first)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 egg
  • 1/4 cup all purpose flour

Instructions

  • Add the zucchini, carrots and riced cauliflower to a mixing bowl. Add the rest of the ingredients and stir together.
  • Spray olive oil cooking spray to a heated frying pan. Use 1/4 measuring cup to scoop up the veggie mixture and add to the frying pan. You should get 8 veggie cakes.
  • Cook for 3 minutes, then flip and cook for 3 more minutes.
  • Optional: serve with sour cream.
