Tomato Sausage Pasta

Ingredients

  • 6 oz. uncooked ziti
  • 8 oz. turkey sausage
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup tomato puree
  • 1 cup baby spinach
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Reserve 1 cup of pasta water
  • 1 tablespoon grated Parmesan cheese

Instructions

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions. Reserve 1 cup of the pasta water before draining the noodles.
  • Add the turkey sausage to a large skillet. Brown the sausage breaking it up while it cooks.
  • Add the cherry tomatoes and garlic to the sausage. Cook over medium heat until the tomatoes are soft and breaking down, 5-10 minutes.
  • Mix in the tomato puree and seasonings then add 1/2 cup to 1 cup of pasta water. Add the spinach and cook until the spinach is wilted.
  • Stir in the cooked ziti and top with Parmesan cheese.
  • If you don't like your food spicy you can omit the red pepper flakes.
