Thai Chicken Noodle Soup

This soup not only satisfies your taste buds but it’s also perfect for a healthy meal option.

It brings together the aromatic and distinct tastes of Thai cuisine in a form that’s easy to prepare and perfect for Weight Watchers.

Another reason this soup recipe stands out is that it’s easy to make—it’s ready in just 30 minutes.

The Ingredients

Chicken: I used boneless skinless chicken breast. I used a rotisserie chicken because I needed it to be cooked.

This recipe also works great if you have leftover cooked chicken.

Chicken Broth: This is the base of the soup broth, I bought store-bought chicken broth.

Coconut Milk: To save points I used unsweetened coconut milk. It still gives the soup the creamy coconut taste it needs.

Thai Red Curry Paste: This is a key component of Thai cuisine. It adds a flavorful base made up of red chilies, spices, and other ingredients.

Fish Sauce: This adds the savory and umami notes typical in Thai dishes.

Ginger: This adds a vibrant, aromatic flavor with a slightly spicy kick, enhancing the overall taste of the dish.

It also aids digestion and potentially provides health benefits like reducing nausea and inflammation.

Garlic: Fresh minced garlic is a must in this soup. Using a garlic press can help you easily mince the garlic.

Rice Noodles: These noodles are perfect because of their neutral taste, light texture, and ability to absorb the flavors of the broth.

Lime Juice: This adds a burst of tanginess, balancing the flavors and giving the soup a fresh lift.

Red Pepper: This adds additional flavor and compliments the other ingredients well.

Onion: I used yellow onion to add a little bit of sweetness to the soup.

Cilantro: I garnished the soup with fresh cilantro. It gave it a pop of color and tasted great.

How to Make Thai Chicken Noodle Soup

Start by chopping the red bell pepper and onion.

Heat a nonstick Dutch oven over medium heat. Spray with cooking oil and add the red pepper and onion.

Let the veggies cook for 3-4 minutes.

Next, add the minced garlic and ginger and let it sauté for 1 minute.

Stir in the red curry paste then add the chicken broth, coconut milk, fish sauce, and chicken.

Bring the soup to a boil then add the rice noodles. Cook the rice noodles according to the directions on the package.

Stir in the lime juice then serve.

Serving Suggestions

I topped my soup with fresh cilantro. It added a pop of color and extra flavor.

Another option is to add fresh lime wedges on the side. A squeeze of lime juice can brighten the flavors and add a bit of tanginess that complements the savory broth.

If you’re a fan of spice, thinly sliced jalapenos or a drizzle of Sriracha sauce can provide that extra kick.

  • 2 cups cooked chicken breast, shredded
  • 4 oz. rice noodles
  • 1 tablespoon fresh lime juice
  • 1/4 cup cilantro, chopped (optional)

Instructions

  • Heat a nonstick Dutch oven over medium heat. Spray with cooking oil and add the red pepper and onion.
  • Let the veggies cook for 3-4 minutes.
  • Next, add the minced garlic and ginger. Let it cook for 1 minute.
  • Stir in the red curry paste then add the chicken broth, coconut milk, fish sauce, and chicken.
  • Bing the soup to a boil then add the rice noodles. Cook the rice noodles according to the directions on the package.
  • Stir in the lime juice then serve. Top each bowl with chopped cilantro.
