Spinach Pie
Can you believe this spinach pie is only 2 points per slice!?
If you’re planning on grilling some chicken (or steak) this would make a perfect side dish!
I haven’t worked with phyllo dough before, so I was somewhat intimidated. There was really no need to be.
It’s delicate, but easy to work with.

The most important thing is to let the phyllo dough defrost in the fridge the night before.
It needs to properly defrost, that will make it easy to work with.
I also let the chopped spinach defrost in the fridge overnight. I put the boxes in a bowl because liquid tends to drain from the spinach.
One way I kept this lower in points was by not using all of the phyllo dough.
Also, instead of using butter on the phyllo sheet layers I used oil spray. That saved a lot of points!
The only butter I used in this recipe was to sauté the onions and garlic. I only used 1 teaspoon of butter which was 2 points.
The Ingredients
- Phyllo dough
- Chopped spinach
- Butter
- Yellow onion
- Garlic
- Eggs
- Parsley
- Dill
How to Make Spinach Pie
Spray your 9×13 pan with nonstick cooking spray.
Melt the butter in a pan. Sauté onions and garlic until translucent.
Add the spinach, eggs, Parmesan cheese, dill, parsley, onion mixture, salt, and pepper to a medium-sized mixing bowl. Mix the ingredients together.
Place one sheet of phyllo dough in the baking dish, then spray the sheet with oil. Repeat four more times.
Add the spinach mixture and spread it out.
Add a sheet of phyllo dough and spray with olive oil spray. Repeat 9 more times.
Bake in the oven 35-40 minutes.

Ingredients
- 15 sheets phyllo dough, defrosted
- 20 oz. chopped spinach, thawed and drained
- 1 teaspoon butter
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 eggs
- 1/2 cup Parmesan cheese, shredded
- 2 teaspoons parsley
- 1 teaspoon dill
- Zero point oil spray or nonstick cooking spray
Instructions
- Preheat oven to 350 degrees F.
- Melt the butter in a pan. Sauté onions until translucent then add the garlic. Sauté an additional minute then remove from heat.
- Add the spinach, eggs, Parmesan cheese, dill, parsley, and onion mixture to a mixing bowl.
- Spray a 9×13 pan with olive oil spray. Add one sheet of phyllo dough, then spray the sheet of phyllo dough. Repeat four more times.
- Add the spinach mixture and evenly spread it out.
- Add a sheet of phyllo dough and spray with olive oil spray. Repeat 9 more times.
- Bake in the oven 35-40 minutes.
