Ingredients
2cupscooked chicken breast, shredded
2cupscooked white rice
1cupblack beans, rinsed and drained
1cupcorn
16oz.salsa verde
1/4teaspoongarlic powder
1/4teaspoononion powder
1/4teaspooncumin
1/2cupreduced-fat Mexican cheese, shredded
Instructions
Preheat oven to 350 degrees F. Spray a small casserole dish with nonstick cooking spray.
Add the chicken, rice, black beans, corn, salsa verde, garlic powder, onion powder, and cumin to a large mixing bowl. Stir all of the ingredients together.
Pour the chicken mixture into the casserole dish and spread it out evenly.
Sprinkle the Mexican cheese over the top of the casserole. Bake for 30 minutes or until the casserole is heated through and the cheese is melted.
