Salsa Verde Chicken Casserole

This casserole combines tender chicken, fluffy rice, sweet corn, hearty black beans, tangy salsa verde, and gooey Mexican cheese into a delicious, satisfying meal.

It’s also low in points, only 5 points per (large) serving!

This casserole is perfect for anyone looking to enjoy a hearty meal without the guilt.

There’s also plenty of room for customization.

The Ingredients

Chicken Breast: I used a rotisserie chicken for this recipe. You can also use leftover chicken. It’s a great source of lean protein which helps to build muscle and can help keep you full longer.

Rice: You need 2 cups of cooked rice, any rice will work. It’s a rich source of carbohydrates which helps to provide energy.

Black Beans: This is an excellent source of protein, fiber, iron, magnesium, folate, and antioxidants.

Corn: You can use fresh, frozen, or canned corn. If you’re using frozen corn you’ll want to let it thaw first.

Using corn in this recipe gives it a nice crunch plus it’s high in fiber.

Salsa Verde: This is made with cooked tomatillos, green chilies, garlic, onion, cilantro, and lime juice. It adds a ton of flavor to the dish. I used store bought but you can also make your own.

Seasonings: I added garlic powder, onion powder, and cumin for an extra boost of flavor.

How to Make Salsa Verde Chicken

Both the chicken and rice need to be cooked before making the casserole.

Once cooked, shred the chicken.

Add the chicken, rice, black beans, corn, salsa verde, garlic powder, onion powder, and cumin to a large mixing bowl. Stir all of the ingredients together.

Spray a small casserole dish with nonstick cooking spray. Pour in the chicken mixture and spread it out evenly.

Sprinkle the shredded Mexican cheese blend over the top of the casserole.

Bake at 350 degrees F. for 30 minutes or until the casserole is heated through and the cheese is melted.

Serving Suggestions

To add the finishing touches to your Salsa Verde Chicken Casserole, consider these topping options to boost both the flavor and presentation:

Fresh cilantro: A sprinkle of chopped cilantro not only adds a burst of color but also enhances the freshness of the dish.

Green onions: Thinly sliced green onions provide a mild onion flavor and a bit of crunch.

Sour cream: A dollop of sour cream offers a creamy contrast to the zesty salsa verde, balancing out the flavors nicely.

For those who enjoy a bit of spice, consider adding some chopped jalapeños. Also, instead of mild salsa verde, you can use the medium.

Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups cooked white rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 16 oz. salsa verde
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/2 cup reduced-fat Mexican cheese, shredded

Instructions

  • Preheat oven to 350 degrees F. Spray a small casserole dish with nonstick cooking spray.
  • Add the chicken, rice, black beans, corn, salsa verde, garlic powder, onion powder, and cumin to a large mixing bowl. Stir all of the ingredients together.
  • Pour the chicken mixture into the casserole dish and spread it out evenly.
  • Sprinkle the Mexican cheese over the top of the casserole. Bake for 30 minutes or until the casserole is heated through and the cheese is melted.
