Pumpkin Spice Cheesecake Mousse

Ingredients

  • 4 oz. light cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup fat-free Greek yogurt
  • 2 tablespoons granulated Splenda
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon

Instructions

  • Add the softened cream cheese to a mixing bowl. Beat the cream cheese until it is smooth and fluffy.
  • Add the pumpkin puree, Greek yogurt, sweetener, vanilla extract, pumpkin pie spice, and cinnamon. Mix until combined and creamy. Taste and adjust sweetness if needed.
  • Chill in the refrigerator for at least 1 hour before serving (this helps it set and makes the flavors pop).
  • Divide into 4 bowls or ramekins, top with whipped cream (optional), and enjoy!
