Pumpkin Pie Crisp

Ingredients

For the pumpkin pie:

  • 1 15 oz. can pumpkin
  • 12 oz. fat-free evaporated milk
  • 2 eggs
  • 2 teaspoons pumpkin pie spice
  • 1/8 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated Splenda

For the crisp:

  • 1 cup quick oats
  • 1 1/2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated Splenda
  • 1/8 teaspoon cinnamon

Instructions

  • Preheat oven to 375 degrees F.
  • In a mixing bowl stir together all of the pumpkin pie ingredients. Once it is smooth add it to a pie dish that has been sprayed with no-stick cooking spray.
  • Bake for 10 minutes.
  • While the pie bakes put all of the ingredients for the crisp together in a mixing bowl. Mix together, then evenly spread over the pumpkin pie at the end of the 10 minutes.
  • Bake an additional 30-35 minutes.
