Pea Salad

Pea salad is perfect for a warm weather side dish!

Whether you’re grilling chicken, steak, or hamburgers, this pea salad is a perfect match.

It’s lightened up and Weight Watchers friendly, but still full of flavor.

For the dressing I used light mayonnaise and fat free sour cream, this helped to reduce the points. I also used reduced fat Mexican cheese.

Whenever I make a dish that has bacon in it I use Oscar Mayer center cut bacon. 4 slices is only 4 points, not bad for bacon!

The Ingredients

  • Peas
  • Center cut bacon
  • Reduced-fat Mexican cheese
  • Red onion
  • Light mayonnaise
  • Fat-free sour cream
  • Vinegar
  • Salt and pepper

How to make Pea Salad:

The first thing I did was cooked the bacon. I set it on paper towel to drain the grease and let it cool off then I cut it into small pieces.

In a small bowl I mixed together the light mayonnaise, fat free sour cream, vinegar, salt and pepper.

To a large mixing bowl I added the peas, cheese, red onion, bacon and dressing.

Mix it all together, cover it and put it in the fridge for 2 hours.

That’s it! It really is such an easy side dish.

I always use frozen peas for pea salad, I don’t recommend using canned peas. The frozen peas are so bright and colorful plus they taste better in pea salad.

Just make sure you let the peas thaw before making the salad.

Yield: 4 servings (each serving is a heaping 1/2 cup)

Ingredients

  • 2 cups frozen peas, thawed
  • 4 slices center cut bacon, cooked and cut into bite size pieces
  • 1/3 cup reduced fat Mexican cheese, shredded
  • 1/4 cup red onion, chopped

For the dressing:

  • 1/4 cup light mayonnaise
  • 1/4 cup fat free sour cream
  • 1 teaspoon vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • In a small bowl mix together the light mayonnaise, fat free sour cream, vinegar, salt and pepper.
  • In a large bowl add the peas, bacon, cheese, red onion and dressing. Mix together.
  • Cover and refridgerate for two hours.
