Mississippi Chicken
We’re taking the classic Mississippi roast and exchanging it for chicken, making it a lighter yet equally satisfying option.
The key to its distinctive taste lies in the blend of pepperoncini peppers, ranch dressing mix, and au jus gravy mix.
This sauce not only envelops the chicken but also enhances its natural tenderness, resulting in a dish that is both comforting and delicious.

Whether you want to make it in the Instant Pot or slow cooker, the prep work couldn’t be any easier.
Gather Your Ingredients
Chicken breasts – I used chicken breasts since they are 0 points with Weight Watchers. You could also use boneless, skinless chicken thighs. Just make sure to add in the points.
Ranch dressing mix – this helps to add a creamy, herby base to the sauce.
Au jus gravy – this adds to the delicious flavor of the sauce.
Pepperoncini peppers – these offer a mild heat and a tangy punch, elevating the dish with their unique flavor. I used 6 peppers and 1/2 cup of juice.
Onion and garlic – although these ingredients aren’t typically in a Mississippi roast, I added them. If you don’t have these ingredients on hand it’s ok to leave them out.
Chicken broth – I used this for the liquid base.
One thing I left out was the butter. I originally reduced the amount and used light butter. I then tried it without the butter. It didn’t change the taste enough to make it worth the points.

How to Make Mississippi Chicken
I used an Instant Pot to make this, but I’ll include slow cooker instructions on the recipe card.
Add the chicken breast to the bottom of the Instant Pot. Pour the ranch seasoning and au jus over the chicken.
Pour in the chicken broth and pepperoncini liquid.
Top the chicken with the chopped onion and minced garlic.
Finally, top it off with 8 pepperoncini.
Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal, then press the manual button and set the timer for 8 minutes.
Let the pressure naturally release for 10 minutes, then release the pressure and remove the lid.
Remove the chicken and shred it with two forks. The chicken will be so tender it should easily shred.
Put the chicken back into the pot, mix it in with the gravy and serve.
Serving Suggestions
I love that this Mississippi Chicken is only 1 point per serving. You have the option to pair it with a zero point side, or you can go for a side dish higher in points.

- Roasted vegetables
- Rice
- Noodles
- Salad

Ingredients
- 1 lb. boneless, skinless chicken breast
- 1 oz. ranch seasoning packet
- 1 oz. au jus gravy
- 8 pepperoncini, plus 1/2 cup of the juice
- 1/2 cup low sodium chicken broth
- 1 small yellow onion, chopped
- 1 clove garlic, minced
Instructions
- Add the chicken breast to the bottom of the pot.
- Pour the ranch seasoning and au jus over the chicken.
- Pour in the chicken broth and pepperoncini liquid. Top the chicken with chopped onion and minced garlic.
- Top the chicken with 8 pepperoncini.
For the Instant Pot:
- Place the lid on the Instant Pot and lick it. Make sure the lever is set to seal, then press the manual button and set the timer for 8 minutes.
- When the time is up let the pressure naturally release for 10 minutes, then release the pressure and remove the lid.
- Remove the chicken and shred it with two forks. Put the chicken back in the pot and mix it in with the gravy.
For the slow cooker:
- Place the lid on the slow cooker and cook on low for 6 hours.
- When the cooking time is up, remove the chicken and shred it. Put the chicken back in the pot and mix it in with the gravy.
