Mexican Chicken Pinwheels

Ingredients

  • 2 Mission Carb Balance flour tortillas
  • 1 cup boneless, skinless chicken breast, cooked and shredded
  • 3 Laughing Cow Light cheese wedges
  • 2 tablespoons fat-free sour cream
  • 1 tablespoon taco sauce
  • 1/2 teaspoon taco seasoning
  • 2 tablespoons cilantro, chopped
  • 1 green onion, sliced

Instructions

  • In a mixing bowl, add the chicken, Laughing Cow cheese, fat-free sour cream, taco sauce, taco seasoning, cilantro, and green onions.
  • Lay out the tortillas and spread half of the chicken mixture onto each one. Leave a little space around the border of the tortilla.
  • Starting at one end, tightly roll each tortilla into a log. Cut the ends of the tortilla off, then cut each tortilla into six pieces. There should be 12 pinwheels total.
