Low Carb Cabbage Soup with Ground Beef

Ingredients

  • 1 lb. 93% lean ground beef
  • 1 small yellow onion, chopped
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 1 medium green bell pepper, chopped
  • 2 cups chopped cabbage
  • 4 cups reduced-sodium beef broth
  • 14.5 oz. petite diced tomatoes (with liquid)
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  • Brown the ground beef in a large pot, drain any excess fat.
  • Add onion, garlic, celery, and green bell pepper. Sauté until slightly softened.
  • Stir in the chopped cabbage, diced tomatoes, and broth.
  • Season with garlic powder, onion powder, and Italian seasoning.
  • Simmer 15-20 minutes, until cabbage is tender.
  • Adjust seasonings (salt and pepper), garnish, and enjoy!
