Lightened Up Chicken Parmesan

Ingredients

For the marinara sauce:

  • 15 oz. tomato sauce
  • 1/2 teaspoon dried minced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 tablespoon grated parmesan cheese

For the chicken:

  • 2 boneless, skinless chicken breast
  • 1/2 cup Italian breadcrumbs
  • 1 tablespoon grated parmesan cheese
  • 1 egg
  • Olive oil spray
  • 1 slice part-skim mozzarella cheese, cut in half

Instructions

  • Add all of the ingredients for the marinara sauce to a saucepan. Bring to a simmer then reduce the heat to low.
  • Place two bowls on the counter. Add the egg to one bowl and whisk it.
  • Add the Italian breadcrumbs and 1 tablespoon of grated parmesan cheese to the second bowl and mix it together.
  • Dredge the chicken in the egg followed by the breadcrumb mixture.
  • Place the chicken in the air fryer basket and spray with oil. Cook in the air fryer at 350 degrees for 5 minutes. Flip the chicken over and add two tablespoons of marinara sauce and 1/2 slice of mozzarella cheese to each piece of chicken.
  • Cook for 5 more minutes or until the chicken reaches an internal temperature of 165 degrees F.

For the oven:

  • Once the chicken is dredged in the breadcrumbs place it on a baking sheet. Spray with olive oil and bake for 20 minutes at 400 degrees F.
  • Take the chicken out of the oven and add two tablespoons of marinara sauce and 1/2 slice of mozzarella cheese to each piece of chicken. Place back in the oven until the cheese is melted.
