Lemon Garlic Couscous

Ingredients

  • 1 teaspoon butter
  • 1 clove garlic, minced
  • 1 1/4 cups chicken broth
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon dried parsley
  • 1 cup couscous

Instructions

  • Melt the butter in a saucepan. Add the minced garlic and cook for 30 seconds.
  • Add the chicken broth, lemon juice, salt and parsley. Bring to a boil then stir in the couscous.
  • Cover the pan with a lid and remove from heat. Let sit for 5 minutes then fluff with a fork.
