Ingredients
1lb.92% lean ground chicken
1egg
1/3cupgrated Parmesan cheese
2clovesgarlic, minced
2tablespoonsalmond flour
2tablespoonsfresh parsley, chopped
1/2teaspoononion powder
1/2teaspoonItalian seasoning
1/2teaspoonbasil
1/2teaspoonoregano
1/2teaspoonsalt
1/4teaspoonpepper
1/2cupRao's Tomato Basil Sauce
Olive oil spray
Instructions
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
In a large bowl, combine the ground chicken, egg, Parmesan cheese, almond flour, garlic, fresh parsley, onion powder, Italian seasoning, basil, oregano, salt, and pepper. Mix gently until combined.
Roll into 12 meatballs (approximately 1.5 to 2 inches each) and place them on the baking sheet.
Spray the tops lightly with olive oil spray. Bake for 20-22 minutes, until the internal temperature reaches 165 degrees F.
Optional: Broil for 1-2 minutes for extra browning.
Toss the meatballs in the pasta sauce and serve.
