Ingredients

  • 1 lb. 92% lean ground chicken
  • 1 egg
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons almond flour
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup Rao's Tomato Basil Sauce
  • Olive oil spray

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl, combine the ground chicken, egg, Parmesan cheese, almond flour, garlic, fresh parsley, onion powder, Italian seasoning, basil, oregano, salt, and pepper. Mix gently until combined.
  • Roll into 12 meatballs (approximately 1.5 to 2 inches each) and place them on the baking sheet.
  • Spray the tops lightly with olive oil spray. Bake for 20-22 minutes, until the internal temperature reaches 165 degrees F.
  • Optional: Broil for 1-2 minutes for extra browning.
  • Toss the meatballs in the pasta sauce and serve.
