Instant Pot Pork Tenderloin

Ingredients

  • 1 lb. pork tenderloin (trimmed of any fat)
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon parsley
  • 1/2 teaspoon seasoning salt
  • 1/4 teaspoon black pepper

Instructions

  • In a small bowl mix together the garlic powder, onion powder, chili powder, parsley, seasoning salt and black pepper.
  • Pour chicken broth into the bottom of the Instant Pot. Place the trivet into the pot.
  • Cut the pork tenderloin in half then place on the trivet. Pour the seasoning mix over the pork tenderloin.
  • Secure the lid in the locked position and make sure the lever is set to seal. Press the manual button and set the time to 12 minutes.
  • When the time is up let the pressure release naturally for 10 minutes. Release the pressure and remove the lid.
  • Place the pork on a cutting board and let it rest for 5 minutes.
  • Remove the trivet and turn the Instant Pot to sauté. Add the cornstarch to a small bowl and mix with 1/4 cup of water. When the cooking liquid starts to simmer stir in the cornstarch mixture. Cook for 3 minutes, until the liquid thickens and reduces slightly, stirring occasionally.
  • Slice the pork tenderloin, add to a serving platter and top with gravy.

For the slow cooker:

  • In a small bowl mix together the garlic powder, onion powder, chili powder, parsley, seasoning salt and black pepper.
  • Add the chicken broth and pork tenderloin to the slow cooker.
  • Top the pork tenderloin with the seasoning mix. Cover and cook on low 4 hours.
  • Remove the pork tenderloin and let it rest.
  • Pour the cooking liquid into a small saucepan and bring to a simmer.
  • In a small bowl mix together the cornstarch and 1/4 cup of water. Stir into the cooking liquid. Let simmer 3 minutes, until it thickens and reduces slightly.
  • Slice the pork tenderloin and add to a serving platter. Top with the gravy.
