Ground Beef Burrito Bowl

Ingredients

  • 1 lb. 96% lean ground beef
  • 1 oz. taco seasoning
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 14 oz. salsa
  • 1 cup corn (canned or frozen)
  • 1 cup reduced fat Mexican cheese, shredded

Instructions

  • Add the ground beef to a nonstick skillet. Break it apart and cook it until no longer pink. Drain any excess grease.
  • Stir in the taco seasoning then add the rice, chicken broth, corn, and salsa. Bring to a boil, cover, reduce heat, and simmer for 20 minutes.
  • Make sure to stir the mixture occasionally so the rice doesn't stick together.
  • Divide the mixture into six servings and add your favorite toppings.
