Grinder Salad Sandwich

Ingredients

For the dressing:

  • 1 tablespoon light mayonnaise
  • 1 tablespoon fat-free sour cream
  • 1 teaspoon red wine vinegar
  • 1 tablespoon red onion, chopped
  • 3 banana pepper slices
  • 1/2 teaspoon oregano
  • 1/8 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup iceberg lettuce, sliced

For the sandwich:

  • 1 Aunt Millie's mini sub bun (scrape the inside out until the bun is 1 1/4 oz.)
  • 2 oz. Boar's Head cooked ham
  • 12 turkey pepperoni
  • 1 slice part-skim mozzarella cheese

Instructions

  • In a small bowl mix together the light mayonnaise, fat-free sour cream, red wine vinegar, red onion, banana pepper slices, oregano, garlic powder, salt and pepper.
  • Add the iceberg lettuce and mix together.
  • Cut the sub bun in half. Add the ham and turkey pepperoni to one side and the mozzarella cheese to the other side.
  • Put the sub on a baking sheet and place under the broiler until the cheese is melted and the meat is heated through.
  • Add the salad mixture to the sub plus any additional toppings.
