"Fried" Pork Tenderloin - Weight Watchers

- 1 lb. pork tenderloin
- 1/2 cup all purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon pepper
- 1 teaspoon salt
- 2 tablespoons olive oil
Mix together flour, garlic powder, onion powder, pepper and salt. I put the flour mixture in a pie pan.
Trim any fat off of the pork tenderloin. Cut tenderloin into one inch medallions.
Place one medallion in between 2 pieces of plastic wrap. Use a meat mallet to pound pork flat to about 1/4 inch.
Heat oil in a large skillet over medium heat. Dredge each piece of pork into flour mixture making sure both sides are covered in flour. Place in skillet and cook 4 minute. Flip the pork and cook 4 minutes on the other side (or until fully cooked).
