French Dip (Instant Pot or Slow Cooker)
This French Dip is an easy meal that can be made in the Instant Pot or slow cooker!
The meat turns out so flavorful and tender. It’s absolutely delicious!

I usually do my grocery shopping at Kroger. This past week they had round roasts on sale buy one get one free. I couldn’t pass that up!
The Ingredients
Beef Round Roast: I love that this is 0 points with the current Weight Watchers plan. I bought a round roast that was large enough to make 4-6 servings. French Dips are even better the next day.
Campbell’s French Onion Soup: This helps to add a lot of flavor to the roast.
Beef Broth: This adds a rich flavor and moisture to the meat. It helps to make the meat more tender and flavorful.
Onion: Onion also adds a rich savory flavor. The more flavor the better!
Garlic: Using fresh garlic works best, but you can also use garlic powder.

If you’re looking for a low point bread option, I like to use Aunt Millie’s Live Carb Smart hot dog buns. They’re only 1 point each.
How to Make French Dips
Add the sliced onion, French onion soup, beef broth, minced garlic, and black pepper to the bottom of the Instant Pot or slow cooker.
Cut the beef roast into 3 pieces, then add it to the Instant Pot or slow cooker and secure the lid.
For the Instant Pot – make sure the lever is set to seal, select “pressure cook” and set the time to 60 minutes.
Let the pressure naturally release for 30 minutes. Remove the lid and shred the beef with a fork.
For the slow cooker – Cook on low for 8 hours or on high for 4 hours. Remove the lid and shred the beef.
French Dip – Instant Pot or Slow Cooker

Ingredients
- 1 Beef Round Roast
- 1 onion, sliced
- 1 (10.5 oz.) can Campbell's French onion soup, condensed
- 2 cups beef broth
- 2 cloves garlic, minced
- 1/4 teaspoon pepper
Instructions
For the Instant Pot:
- Add the French onion soup, beef broth, onion, garlic, and pepper to the Instant Pot.
- Slice the beef roast into 3 pieces, then add to the Instant Pot. (This helps to reduce the cooking time.)
- Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Select the "pressure cook" button and set the time for 60 minutes.
- Let the pressure release naturally for 30 minutes. Remove the lid and shred the beef with a fork. If you are making a sandwich add 3 ounces of beef to bread and serve with 1/4 cup of the au jus.
For the slow cooker:
- Add all of the ingredients to the slow cooker. Leave the roast whole for the slow cooker.
- Cook on low for 8 hours or high for 4 hours.
- Remove the lid and shred the beef with a fork. If you are making a sandwich add 3 ounces of beef to bread and serve with 1/4 cup of the au jus.

Hi! I wouldn’t worry too much about the size of the roast, but the size of the portion for your sandwich. I use a food scale and it comes in handy for all kinds of food. Pasta and meat portions especially. I used 3 oz. of the roast per sandwich. It doesn’t sound like a lot, but you’d be surprised once you weigh it out. I hope that helps!
