Fiesta Chicken Casserole

Ingredients

  • 2 cups boneless, skinless chicken breast cooked and shredded
  • 1 cup instant rice
  • 1 cup fat free sour cream
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 1/2 cup corn
  • 1 cup reduced fat Mexican cheese, shredded, divided

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x8 baking dish with nonstick cooking spray.
  • In a large bowl add the sour cream, salsa and taco seasoning. Stir together.
  • Add the shredded chicken, rice, corn and half of the Mexican cheese. Mix together and add to the baking dish. Top with the remaining cheese.
  • Cover the baking dish with aluminum foil and bake for 30 minutes.
