Crunchy French Toast

Ingredients

  • 1/3 cup Cinnamon Toast Crunch
  • 2 eggs
  • 1/4 cup skim milk
  • 1 teaspoon vanilla extract
  • 2 slices of bread that are 1 point each

Instructions

  • Add the Cinnamon Toast Crunch cereal to a zip-up bag and crush it into small pieces. Add the cereal to a shallow bowl.
  • In a shallow bowl, whisk together the eggs, milk, and vanilla extract.
  • Heat a nonstick skillet over medium heat and spray with nonstick cooking spray.
  • Take a slice of bread and dip it into the egg mixture, making sure to coat both sides. Then dip the bread into the crushed cereal, making sure to coat both sides.
  • Cook until the bottom is golden, then flip and cook the other side until it is golden brown and crispy.
  • Repeat with the second piece of bread. This recipe can easily be doubled or tripled to feed a crowd.
