Crispy Cheesy Cauliflower Fritters

Ingredients

  • 3 cups riced cauliflower
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 2 eggs
  • 1/4 cup panko breadcrumbs
  • 1/2 tablespoon chives, chopped
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  • If you're using frozen riced cauliflower, microwave it for 2-3 minutes and press out any moisture using a clean kitchen towel or paper towels. You want it dry to avoid soggy fritters.
  • Preheat a nonstick skillet over medium heat.
  • In a large bowl, mix the cauliflower, eggs, cheese, panko, garlic powder, onion powder, chives, salt, and pepper until well combined.
  • Scoop about 2 tablespoons of the mixture and flatten into small patties.
  • Spray the skillet with cooking spray. Cook the fritters 3-4 minutes per side until golden brown and cooked through.
