Creamy Tuscan Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 3/4 cup fat free half and half
  • 1 1/2 cups cherry or grape tomatoes, cut in half
  • 2 cups fresh chopped spinach
  • 1 teaspoon Italian seasoning
  • 1/4 cup finely shredded Parmesan cheese
  • Salt and pepper, to taste
  • Garlic powder (optional)
  • olive oil spray

Instructions

  • Preheat a large nonstick skillet over medium heat.
  • Season chicken breasts with salt, pepper and garlic powder.
  • Spray the pan with olive oil spray. Add the chicken breasts and cook 3 minutes on each side. Remove the chicken from the pan and set aside.
  • Spray the pan with olive oil spray and add the minced garlic. Cook for 1 minute.
  • Add the chicken broth and half and half. Let it come to a light simmer then stir in the Parmesan cheese and Italian seasoning.
  • Add the tomatoes and spinach and cook until the spinach is wilted.
  • Place the chicken back in the pan and let it cook 3 minutes.
