Creamy Lemon Pie

Ingredients

  • 1 (1 ounce) box Lemon Jell-O sugar-free, fat-free pudding pie mix
  • 2 cups skim milk
  • 4 ounces fat-free Cool Whip
  • 1 store bought graham cracker pie crust

Instructions

  • Add the pudding mix and skim milk to a medium mixing bowl. Whisk together for two minutes.
  • Pour 1 1/2 cups of pudding to the bottom of the pie crust. Use the offset spatula to spread it into an even layer.
  • Fold the Cool Whip into the remaining lemon pudding, then add it to the pie crust.
  • Refrigerate the pie for at least 1 hour.
