Ingredients
10oz.shrimp, peeled and deveined
2teaspoonscajun seasoning, divided
1red bell pepper, chopped
1smallyellow onion, chopped
1clovegarlic, minced
3/4cupfat-free half and half
2teaspoonscornstarch (mixed with 1 1/2 tablespoons of water)
Salt and pepper, to taste
Instructions
Place the shrimp in a bowl and add 1 teaspoon of cajun seasoning. Stir to combine.
Spray a nonstick pan with cooking oil. Add the shrimp and cook over medium heat for 2 minutes on each side.
Remove the shrimp from the pan and cover it. Leave any extra juices in the pan.
Add the red bell pepper and onion to the pan. Cook for 5 minutes then add the minced garlic. Let cook for 1 minute then stir in 1 teaspoon of cajun seasoning.
Pour in the half and half. Once it starts to simmer stir in the cornstarch slurry.
When the mixture has thickened add the shrimp back in.
