Creamy Cajun Shrimp

This dish is easy to make and low in points!

It’s only 3 points per serving and they are large servings.

The shrimp tastes great on its own or you can serve it with rice or pasta.

The Ingredients

Shrimp: I bought a 10-ounce bag of frozen shrimp that was peeled and deveined. It’s perfect for a 0 point protein.

Make sure the shrimp is completely thawed before you cook it.

Cajun seasoning: This is where the flavor comes from. I bought cajun seasoning from the store but you could also make your own.

Red Pepper: This adds flavor and a little crunch.

Fat free half and half: Instead of using heavy cream I went with this because it’s much lower in points.

I used 3/4 cup of fat free half and half which was 4 points. If I would have used heavy cream it would’ve been 34 points! That’s a huge difference.

Cornstarch: This was used to help thicken the fat free half and half. I used two teaspoons which was 1 point.

Onion and garlic: This helps to add flavor to the dish.

How to Make Creamy Cajun Shrimp

Put the shrimp in a bowl and add 1 teaspoon of cajun seasoning. Mix to combine.

Spray a nonstick pan with cooking oil and add the shrimp. Cook over medium heat for 1-2 minutes on each side.

Once the shrimp is fully cooked transfer it to a bowl and cover to keep warm. Leave any remaining juice in the pan.

Add the red bell pepper and onion to the pan. Cook for 5 minutes then add the garlic. Stir together and cook for 1 minute.

Add 1 teaspoon of the cajun seasoning then pour in the half and half.

Once it starts to simmer pour in the cornstarch slurry. Make sure to mix it well when you’re pouring it in.

When the mixture has thickened add the shrimp back to the pan.

Since the cajun seasoning has salt in it I waited until it was cooked to see if it needed any additional salt.

Serving Suggestions

I mentioned rice and pasta going well with the Creamy Cajun Shrimp. You can have 1/2 cup rice for only 3 points. That would make it a 6 point meal.

If you serve the shrimp with 2 ounces of spaghetti that will add 6 points, making it a 9 point meal.

You can keep the meal low in points by serving it with a salad that’s also low in points.

  • 1 clove garlic, minced
  • 3/4 cup fat-free half and half
  • 2 teaspoons cornstarch (mixed with 1 1/2 tablespoons of water)
  • Salt and pepper, to taste

Instructions

  • Place the shrimp in a bowl and add 1 teaspoon of cajun seasoning. Stir to combine.
  • Spray a nonstick pan with cooking oil. Add the shrimp and cook over medium heat for 2 minutes on each side.
  • Remove the shrimp from the pan and cover it. Leave any extra juices in the pan.
  • Add the red bell pepper and onion to the pan. Cook for 5 minutes then add the minced garlic. Let cook for 1 minute then stir in 1 teaspoon of cajun seasoning.
  • Pour in the half and half. Once it starts to simmer stir in the cornstarch slurry.
  • When the mixture has thickened add the shrimp back in.
