Creamy Boursin Pork Chops
If you’re on the lookout for an easy dinner that combines flavor, simplicity, and weight-conscious choices, then Creamy Boursin Pork Chops are calling your name.
This delightful dish brings together succulent pork chops and a creamy sauce made with Boursin cheese, creating a meal that’s both satisfying and suitable for your Weight Watchers goals.
Let’s dive into how you can whip up this easy dinner in no time!

The Ingredients
Pork Chops: I used lean boneless pork chops. 3 oz. of cooked boneless pork chop is 3 points.
Boursin Garlic & Herb Cheese: This cheese is creamy and full of flavor. I only used 1/4 cup to keep it lower in points.
Chicken Broth: I mixed 1/4 cup of chicken broth with the Boursin cheese to thin it out some but still keep it creamy.
Seasonings: Garlic powder, onion powder, salt, and black pepper are used to season the pork chops before cooking. I wanted to add as much flavor to the dish as possible.

How to Make Creamy Boursin Pork Chops
For juicy and flavorful pork chops, start by patting them dry with a paper towel. This helps to achieve a good sear.
Generously season both sides with garlic powder, onion powder, salt and pepper.
Letting the pork chops sit at room temperature for about 15 minutes before cooking ensures even cooking and tender meat.
Heat a large nonstick skillet over medium heat. Spray the skillet with 0 point cooking oil and cook the pork chops 4-5 minutes on each side. This timeframe may vary depending on the thickness of your pork chops.
To ensure your pork chops are perfectly cooked, use a meat thermometer to check their internal temperature, aiming for 145°F.
Once the desired temperature is reached, remove the pork chops from the skillet and let them rest for a few minutes while the creamy sauce is made.
Using the same skillet where you seared the pork chops, retain the flavorful browned bits to add depth to your sauce.
Next, pour in the chicken broth and bring it to a gentle simmer, scraping the bottom of the skillet to deglaze and incorporate all the delicious flavors.
Once the broth is simmering, stir in the Boursin cheese, allowing it to melt and blend seamlessly into the liquid.
Place the seared pork chops back into the skillet, nestling them into the rich, creamy Boursin cheese sauce.
Spoon the sauce generously over each chop to ensure they’re fully coated and can soak up the delightful flavors.
Allow the pork chops to simmer gently in the sauce for a few minutes, which will help meld the flavors together and ensure the meat is thoroughly warmed.
Serving Suggestions
To create a balanced and satisfying meal, consider these delicious side dishes:
Roasted Vegetables: Vegetables like carrots, Brussels sprouts, or asparagus make excellent companions.
Mashed Potatoes or Cauliflower: Creamy mashed potatoes or a lighter mashed cauliflower provide a comforting contrast to the savory pork chops and rich, creamy sauce.
Quinoa or Brown Rice: These wholesome grains add a nice textural contrast to the tender pork chops and absorb the flavors of the creamy Boursin sauce beautifully.
Green Salad: A fresh green salad with mixed greens, cucumbers, and a light vinaigrette can offer a refreshing crunch and balance the richness of the pork chops.
Zucchini Noodles or Spaghetti Squash: For a low-carb option, consider serving the pork chops over zucchini noodles or roasted spaghetti squash. These veggie-based “noodles” will soak up the creamy sauce without adding extra carbs.
Storing and Reheating
Leftovers from your delicious Boursin pork chops can make for a quick and satisfying meal on a busy weeknight.
To keep the pork chops juicy and the creamy sauce intact, store them in an airtight container in the refrigerator.
They will stay fresh for up to three days, allowing you to enjoy this delightful dish again without much fuss.
When it’s time to reheat, the key is to do so gently to preserve the creamy texture of the sauce and the tenderness of the meat.
You can reheat the pork chops either in the microwave or on the stovetop. If using the microwave, place the pork chops in a microwave-safe dish, cover it with a microwave-safe lid or plastic wrap, and heat on medium power in short intervals, stirring the sauce occasionally.
This prevents the sauce from breaking or the meat from drying out.
For stovetop reheating, place the pork chops and sauce in a skillet over low to medium heat. Adding a splash of chicken broth can help loosen the sauce and bring back its original creamy consistency.
Stir occasionally and heat until the pork chops are warmed through. This method ensures that the pork chops remain tender and the sauce retains its rich flavor, making your leftovers just as enjoyable as the first serving.
