Corn Salsa

Ingredients

  • 4 ears of corn
  • 1 red pepper, chopped
  • 2 tablespoons red onion, chopped
  • 1 jalapeno, chopped
  • 3 tablespoons cilantro, chopped
  • 1 clove garlic, minced
  • Juice from one lime
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon chili powder

Instructions

  • Bring a pot of water to a boil. Add the corn and cook 4-5 minutes.
  • Remove the corn from the water and let it cool. Once you can handle the corn use a knife to cut off all of the kernels. Add it to a mixing bowl.
  • To the mixing bowl add the red pepper, red onion, jalapeno, cilantro and garlic. Stir together then add the lime juice, salt, pepper and chili powder. Mix together and serve.
