Cinnamon Granola

Yield: 8 (1/4 cup) servings - 2 points for purple, 3 points for blue and green

Ingredients

  • 1 1/2 cups rolled oats
  • 1/4 cup almonds
  • 3/4 teaspoon cinnamon
  • 2 tablespoons granulated Splenda
  • 1/4 teaspoon salt
  • 2 tablespoons honey
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 325 degrees F.
  • Roughly chop the almonds. Add the almonds, rolled oats, cinnamon, Splenda and salt to a large mixing bowl. Mix together.
  • In a separate bowl add the honey, oil and vanilla extract. Stir together then pour over the oat mixture and stir thouroughly.
  • Line a baking sheet with parchment paper. Pour the granola onto the baking sheet and spread out. Bake for 20 minutes stirring half way through.
  • Remove from the oven and let cool completely.
