Chocolate Peanut Butter Overnight Oats

If you’re looking for a tasty and filling breakfast, Chocolate Peanut Butter Oats is the way to go!

I know eggs are a great low point breakfast, but sometimes I need something else.

Overnight oats are super easy to make. You basically mix together the ingredients and stick it in the fridge.

You can make more than one serving at a time too. I usually make enough for 3 breakfasts.

You don’t need to cook overnight oats. As they sit in the fridge overnight the milk absorbs into the oatmeal and puffs it up, giving it a softer texture. It’s perfect for meal prep!

The Ingredients

  • Rolled Oats
  • Unsweetened cocoa powder
  • Unsweetened almond milk
  • Granulated Splenda
  • Vanilla extract
  • PB2 powder
  • Water

There were a few things I did to lighten up the chocolate peanut butter overnight oats.

Instead of using regular milk I used unsweetened almond milk. That alone saved a couple of points.

Instead of using peanut butter I used PB2 powder. It’s a great way to get the taste of peanut butter with fewer points.

I find PB2 powder at the grocery store by the regular peanut butter. You can also buy it here on Amazon.

For the chocolate flavor I used unsweetened cocoa powder with a tablespoon of granulated Splenda. Feel free to use whatever sweetener you prefer.

I used a mason jar for the overnight oats, but you don’t have to. Just make sure you cover up what you use.

How to Make Chocolate Peanut Butter Overnight Oats

Add the rolled oats and cocoa powder to a mason jar and stir together.

Next, add the almond milk, Splenda, and vanilla extract. Stir everything together and cover with a lid.

Place in the fridge overnight. The next morning, mix together the PB2 powder and water.

Stir the overnight oats, then pour the PB2 over the top.

Ingredients

  • 1/2 cup uncooked rolled oats
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon granulated Splenda
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons PB2 powder
  • 1 tablespoon water

Instructions

  • Add uncooked rolled oats and unsweetened cocoa powder to a mason jar. Stir together.
  • Add almond milk, Splenda, and vanilla extract. Stir together, cover, then place in the refrigerator overnight.
  • The next morning, mix together the PB2 powder and water.
  • Stir the overnight oats, then pour the PB2 over the top.
