Chocolate Chip Banana Muffins

Ingredients

  • 1 cup mashed bananas (use extra ripe bananas)
  • 1/3 cup unsweetened applesauce
  • 1/2 cup sugar free maple syrup
  • 1/4 cup skim milk
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 tablespoons mini chocolate chips
  • 1 3/4 cups all purpose flour

Instructions

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl add the mashed bananas, applesauce, sugar free maple syrup, skim milk, eggs, baking soda, baking powder, vanilla extract, salt and cinnamon. Stir together well.
  • Add the chocolate chips and flour. Mix together but don't over stir it.
  • Line a muffin tin with cupcake liners. Divide the muffin batter into the 12 cups.
  • Bake for 20 minutes. Remove from oven and let cool for 5 minutes.
