Chicken Sausage Sheet Pan Dinner

Ingredients

  • 4 Good & Gather Italian-style chicken sausage links
  • 12 oz. russet potato (I peeled mine but you can leave the skin on if you prefer)
  • 1 1/2 cups baby carrots
  • 2 cups chopped broccoli (I used frozen)
  • 1 medium yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Cut the potatoes, carrots, and onions into bite-size pieces, no larger than 1 inch. If the veggies are too big they won't cook all the way through.
  • Add the potatoes, carrots, onion, and broccoli to a large mixing bowl.
  • In a small bowl, mix together the garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  • Drizzle 1 tablespoon of olive oil over the vegetables, then add the seasonings. Mix everything together really well.
  • Add the veggie mixture to a sheet pan in an even layer. Roast in the oven for 25 minutes, mixing halfway through.
  • Cut each sausage link into 5 pieces. The chicken sausage is already fully cooked, so it just needs to be heated through.
  • Place the sausage pieces on the sheet pan and put it back in the oven for 7 minutes.
