Chicken Pot Pie Baked Potatoes
I love Chicken Pot Pie recipes!

Now Chicken Pot Pie Baked Potatoes!

It’s an easy recipe that’s perfect for leftover chicken or rotisserie chicken.
The most time consuming part of this recipe is making the baked potatoes, but it’s easy.
I made my baked potatoes in the air fryer. I cleaned the potatoes, used a fork to poke holes, sprayed them with olive oil spray, salt, and pepper, then cooked them at 400 degrees for 35-40 minutes.
Baking the potatoes in the oven is easy too. I prep them the same way, bake at 400 degrees but add 5-10 minutes to the total time.
How I kept this recipe low in points:
With the current Weight Watchers plan (1/13/25) potatoes are 0 points. That helped to save a lot of points!
To make the chicken pot pie filling I started by using 1 teaspoon of butter, instead of 1 tablespoon. That helped to save 4 points.
I used Healthy Request cream of chicken soup instead of regular cream of chicken soup. I mixed it with skim milk instead of regular milk, helping to save points.
For the chicken I used boneless skinless chicken breasts since it is 0 points.

How to make Chicken Pot Pie Baked Potatoes:
Since the potatoes take the longest to cook you want to get them ready first.
Clean and dry the potatoes. Spray them with olive oil spray, then add salt and pepper.
You can make the baked potatoes in the oven or air fryer. I will give more detailed instructions on the recipe card below.
While the potatoes cook you can make the chicken pot pie filling.
Melt the butter in a saucepan and add the carrots, celery, and onion. Let it cook for 5 minutes.
Add the minced garlic to the pan and cook for 1 minute.
Pour in the Healthy Request cream of chicken and skim milk. Mix together, then add in the cooked chicken and peas. Season with salt and pepper.
Cook over medium heat while stirring occasionally. Once it starts to simmer reduce the heat to low and stir occasionally until the potatoes are ready.
Once the potatoes are cooked let them cool slightly. Put each potato on a plate and cut it in half.
Pour the chicken pot pie mixture over the potato and serve!
Serving Suggestions
Chicken Pot Pie Baked Potatoes are very filling but if you’re looking for a side consider adding a fresh garden salad.
Lettuce, cucumbers, and cherry tomatoes dressed in a light vinaigrette provide a refreshing contrast to the rich flavors of the main dish.
Steamed green beans or roasted Brussels sprouts also make great sides, offering extra nutrients and flavors that complement the meal.
Chicken Pot Pie Baked Potatoes

Ingredients
- 4 potatoes
- 1 teaspoon butter
- 1/2 cup carrots, diced
- 1/2 cup celery, diced
- 1/2 cup yellow onion, diced
- 2 cloves garlic, minced
- 1 (10.5 oz.) can of Healthy Request cream of chicken
- 3/4 cup skim milk
- 2 cups boneless, skinless chicken breast, cooked and shredded
- 1/2 cup peas (I used frozen)
- Salt and pepper, to taste
Instructions
For the baked potatoes:
- Clean and dry the potatoes. Pierce holes in the potatoes with a fork then spray with olive oil. Season with salt and pepper.
To air fry:
- Place the potatoes in the air fryer basket. Cook at 400 degrees for 35-40 minutes.
In the oven:
- Preheat oven to 400 degrees F. Place the potatoes on a baking sheet and bake 40-45 minutes.
For the pot pie filling:
- Melt the butter in a saucepan. Add the carrots, celery, and onion, and cook for 5 minutes. Stir in the minced onion and cook for 1 minute.
- Pour in the HR cream of chicken soup and skim milk. Mix together then add in the chicken and peas. Season with salt and pepper.
- Cook over medium heat until it starts to simmer, then reduce heat to low stirring occasionally.
- Once the potatoes have cooled to the touch, add each one to a plate and cut it in half. Top with the chicken pot pie mixture and serve.
