Chicken Divan Casserole

Ingredients

  • 10 oz. chopped broccoli (If using frozen broccoli let it thaw)
  • 2 cups boneless, skinless cooked chicken breast, shredded
  • 10.5 oz. 98% fat free cream of chicken soup
  • 1/2 cup fat free sour cream
  • 1/4 cup skim milk
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup reduced fat sharp cheddar cheese
  • 10 reduced fat Ritz crackers

Instructions

  • Preheat oven to 350 degrees F.
  • Spray a 9 x 9 baking dish with nonstick cooking spray. Add the broccoli to the baking dish in an even layer.
  • Top the broccoli with the cooked chicken breast.
  • In a small bowl mix together the cream of chicken soup, sour cream, skim milk, lemon juice, curry powder, garlic powder, onion powder, salt and pepper. Pour it over the chicken and broccoli.
  • Sprinkle the cheddar cheese over the soup.
  • Add the Ritz crackers to a zip up bag. Use a meat mallet or rolling pin to turn the crackers into crumbs. Pour over the cheddar cheese.
  • Bake for 30 minutes or until the cheese is melted and the cracker crumbs are golden.
