Chicken Caesar Sandwiches (Ten Dollar Meal)
This is an easy chicken recipe that is also budget friendly.
You can make it in the slow cooker or Instant Pot. Both are great options.
I like to use the slow cooker when I can let it cook all day. The Instant Pot is perfect when I’m short on time.

The Ingredients
For this recipe, I did my shopping at Kroger.
Chicken breast: I bought the $5 pack of boneless, skinless chicken breast. You get 1.25 lbs., which is a great deal.
I like using chicken breast because it’s 0 points and high in protein.
Lite creamy Caesar dressing: I bought Ken’s lite Caesar dressing which was $3.69. It tastes just like regular Caesar dressing, but it’s lower in points.
Hamburger Buns: To make this a $10 recipe I bought regular hamburger buns for $1.99. If you want to spend more than $10 and lower the overall points you can buy low point hamburger buns.
Some of the “pantry staples” I used were garlic powder, onion powder, salt, and black pepper.
I also used chicken broth, but if you don’t have any, you can substitute it with water.
The total spent for this recipe was $10.68.

How to Make Chicken Caesar Sandwiches
For the slow cooker:
Place the chicken breast in the bottom of the slow cooker. Season the chicken breast with garlic powder, onion powder, salt, and pepper.
Add 1/2 cup of chicken broth (or water) and 1/2 cup of the Caesar dressing to the slow cooker.
Put the lid on the slow cooker and cook on low for 6 hours.
When the cooking time is up, use two forks to shred the chicken.
Assemble the sandwiches by adding 1/4 of the chicken mixture to each bun.
For the Instant Pot:
Place the chicken breast in the Instant Pot. Season it with garlic powder, onion powder, salt, and pepper.
Add 3/4 cup of chicken broth (or water) and 1/2 cup of the Caesar dressing.
Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.
Let the pressure release manually for 10 minutes, then release the pressure and remove the lid.
Use two forks to shred the chicken, then assemble the sandwiches.
Serving Suggestions
To lower the points, you can make it a lettuce wrap instead of using a bun.
If you don’t mind spending more than $10 you can buy a low point bun.
I like Aunt Millie’s Carb Smart buns which are $5.99 and only 1 point each.
Using carb smart buns would make each sandwich 5 points.

Ingredients
- 1 lb. boneless, skinless chicken breast
- 1/2 cup Ken's lite creamy caesar dressing
- 1/2 cup chicken broth (you can use water if you don't have chicken broth) (If using the Instant Pot, use 3/4 cup of chicken broth)
- 4 hamburger buns
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
For the slow cooker:
- Place the chicken in the slow cooker. Season with garlic powder, onion powder, salt, and pepper.
- Add 1/2 cup chicken broth and 1/2 cup Caesar dressing. Place the lid on the slow cooker and cook on low for 6 hours.
- When the cooking time is up, use two forks to shred the chicken.
- To assemble the sandwich place 1/4 of the chicken mixture on each hamburger bun.
For the Instant Pot:
- Place the chicken in the Instant Pot. Season with garlic powder, onion powder, salt, and pepper.
- Add 3/4 cup of chicken broth and 1/2 cup of Caesar dressing to the pot.
- Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.
- When the time is up let the pressure manually release for 10 minutes, then release the pressure and remove the lid.
- Use two forks to shred the chicken. Add 1/4 of the chicken mixture to each hamburger bun.
