Chicken Caesar Pasta Salad

Ingredients

  • 4 oz. penne pasta
  • 1 boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup croutons
  • 3 cups romaine lettuce
  • 1/4 cup Parmesan cheese, shredded
  • 1/2 cup Ken's lite creamy Caesar dressing
  • Salt and pepper, to taste

Instructions

  • Boil a large pot of salted water and cook the pasta according to the package directions. Drain the noodles and let them cool off.
  • Add the chicken, noodles and dressing to a large bowl and toss together.
  • Put the croutons in a zip up bag and use a meat mallet to break them into smaller pieces.
  • Add the lettuce, croutons, Parmesan cheese, lemon juice, salt and pepper to the bowl and stir together.
