Chicken Broccoli Salad

Ingredients

  • 1 broccoli crown, cut into bite-size pieces
  • 1 chicken breast, cooked and shredded
  • 2 slices center cut bacon
  • 2 tablespoons red onion, chopped
  • 1/4 cup light mayonnaise
  • 2 tablespoons fat-free Greek yogurt (plain)
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  • Cook the center cut bacon until crispy, then set it aside to cool. Once cooled, crumble it into small pieces.
  • While the bacon cooks, chop the broccoli and red onion into bite-sized pieces.
  • In a mixing bowl, combine the light mayonnaise, fat-free Greek yogurt, garlic powder, onion powder, salt, and black pepper. (I also added 1/2 teaspoon of water so it's easier to spread.) Mix thoroughly until you have a smooth, creamy dressing.
  • In a large bowl, combine the chopped broccoli, cooked chicken, red onion, and crumbled bacon. Pour the dressing over the top and toss everything together until well coated.
