Chicken and Veggies
This healthy dish is colorful, flavorful, and costs less than $10 to make!
It’s an easy dinner idea, perfect for those busy weeknights.
Another bonus is it’s only 1 point per large serving. It’s also low in carbs, only 7g net carbs per serving.

Since it’s so low in points you can pair it with just about anything. I like to serve mine with rice. You could also serve it with your favorite pasta or a baked potato.
The Ingredients
I spent $9.77 to make this dish. Here is what I bought:
- 1 lb. boneless, skinless chicken breast – $5.00
- Broccoli – $1.47
- Orange pepper – $1.79
- Red onion – $1.05
- Roma tomatoes – $.46
The rest of the ingredients are what I consider to be pantry staples. Extra virgin olive oil, salt, pepper, garlic powder, onion powder, dry mustard, chili powder, and Italian seasoning.
If you don’t have all of the same seasonings, it’s ok. Just use what you have and taste the dish at the end. See if it could use more salt and pepper.

How to Make It
Begin by cutting your chicken into bite-size pieces. Add it to a medium mixing bowl.
Add all of the seasonings to a small bowl and mix together – garlic powder, onion powder, dry mustard, chili poser, salt, pepper, and Italian seasoning. I’ll list the amounts on the recipe card below.
Pour the olive oil over the chicken, then add all but 1 teaspoon of the seasoning to the chicken. Mix it together.
I set the chicken aside and chopped all of the vegetables.
Heat a nonstick skillet over medium heat. Add the chicken and cook for 6-8 minutes, or until the chicken is cooked all the way through.
Remove the chicken with a slotted spoon. You want to leave any of the juices from the chicken in the pan. Cover the chicken so it stays warm.
Add all of the vegetables to the pan and season with the remaining teaspoon of seasoning mix.
Cover the pan so the remaining liquid can help steam the vegetables. I like my veggies to be tender/crisp so I let them cook for 5 minutes.
Add the chicken back to the pan and mix together.
Additional Suggestions
Make it your own by switching up the vegetables. This is a great recipe for cleaning out the fridge.
Instead of chicken you can make it with steak, pork, or tofu.
Switch up the seasonings. If you like a little heat you can add cayenne pepper.

- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
Instructions
