Chicken Alfredo Lasagna Roll Ups

Ingredients

  • 6 lasagna noodles
  • 2 cups boneless, skinless chicken breasts, cooked and chopped
  • 1 1/2 cups part-skim mozzarella cheese, shredded and divided
  • 1/4 cup Parmesan cheese, shredded
  • 1 1/4 cups light alfredo sauce, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F.
  • Boil the lasagna noodles until they are al dente. Drain and lay out the noodles on wax paper.
  • In a mixing bowl add the chicken, 1/2 cup of mozzarella cheese, 1/4 cup of alfredo sauce, garlic powder, onion powder, oregano and salt. Mix together.
  • Spray an 8x8 baking dish with cooking spray.
  • Add 1/6 of the chicken mixture to a lasagna noodle leaving the top 1 inch without chicken. Roll up from the bottom and place in the baking dish. Repeat with the rest of the noodles.
  • Top the lasagna roll ups with the remaining alfredo sauce, Parmesan cheese and mozzarella cheese.
  • Bake for 30 minutes.
