California Roll Bowls
Yield: 2 servings (7 points per serving with blue and purple, 8 points with green)

- 1 cup rice, cooked
- 2 teaspoons rice vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 6 oz. white lump crab meat (I used canned)
- 2 tablespoons light mayonnaise
- 1 tablespoon Sriracha
- 1/2 cucumber, chopped (seeds removed)
- 2 oz. avocado
- 1/4 cup shredded carrots
- Seaweed
Optional:
- Sesame seeds and soy sauce
Add the rice vinegar, sugar and salt to a small bowl. Microwave for 30-60 seconds, until the sugar dissolves. Mix together and stir into the rice.
Divide the rice into two bowls.
Add the crab to a bowl. Add the light mayonnaise and Sriracha and stir together. Divide the crab mixture into the two bowls.
Add the cucumber, avocado, carrots and seaweed to the bowls.
