California Roll Bowls

Yield: 2 servings (7 points per serving with blue and purple, 8 points with green)

Ingredients

  • 1 cup rice, cooked
  • 2 teaspoons rice vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 6 oz. white lump crab meat (I used canned)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon Sriracha
  • 1/2 cucumber, chopped (seeds removed)
  • 2 oz. avocado
  • 1/4 cup shredded carrots
  • Seaweed

Optional:

  • Sesame seeds and soy sauce

Instructions

  • Add the rice vinegar, sugar and salt to a small bowl. Microwave for 30-60 seconds, until the sugar dissolves. Mix together and stir into the rice.
  • Divide the rice into two bowls.
  • Add the crab to a bowl. Add the light mayonnaise and Sriracha and stir together. Divide the crab mixture into the two bowls.
  • Add the cucumber, avocado, carrots and seaweed to the bowls.
