Bruschetta Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breast (4 pieces about 1/4" thick)
  • 3 Roma tomatoes, cut into bite-size pieces
  • 1/4 cup fresh chopped basil
  • 2 cloves garlic, minced
  • 2 teaspoons olive oil
  • 2 slices part-skim mozzarella cheese slices (cut in half)
  • 1 tablespoon balsamic glaze
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon basil
  • 1/8 teaspoon oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • Salt and pepper, to taste

Instructions

  • Add the tomatoes, basil, garlic, olive oil, salt and pepper (to taste) to a mixing bowl. Stir together and set aside.
  • In a small bowl add the garlic powder, onion powder, basil, oregano, salt, and pepper. Mix the seasonings together then season both sides of the chicken breast.
  • Heat a nonstick skillet over medium heat. Add the chicken breast and cook for 3 minutes, then flip. Top the chicken with the cheese slices, cover the pan and cook for 3 minutes, or until the internal temperature reaches 165 degrees F. (Note: if your chicken breasts are thicker than 1/4 inch it will need additional cooking time.)
  • Place the chicken breasts on a plate and top with the tomato mixture.
