Breakfast Banana Cookies

Ingredients

  • 1/4 cup PB2 Powder
  • 3 tablespoons water
  • 2 overripe bananas
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chocolate chips
  • 2 cups quick oats

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a medium mixing bowl add the PB2 Powder and water. Stir together.
  • Add in the bananas and mash them with a fork, then mix together with the PB2 Powder.
  • Next, add the cinnamon, baking powder, baking soda, salt, vanilla extract and chocolate chips. Mix together.
  • Stir in the quick oats and combine all of the ingredients.
  • Use a tablespoon and scoop out a heaping tablespoon to make each cookie. Flatten the cookie batter to form a cookie shape.
  • Bake for 10 minutes then let the cookies cool.
