Bread Pudding

- 2 slices bread (use bread that is only 1 point per slice such as Sara Lee 45 calorie bread)
- 1 egg
- 5 tablespoons unsweetened almond milk
- 1 tablespoon granulated Splenda
- 1/8 teaspoon vanilla extract
Preheat oven to 350 degrees F.
Cut bread into 1/2 inch pieces and add to a bowl.
Whisk together the egg, almond milk, Splenda and vanilla extract.
Pour the egg mixture over the bread. Stir to make sure all of the liquid is absorbed.
Spray a 10 oz. ramekin with no-stick cooking spray, then add the bread mixture.
Bake for 25 minutes. Enjoy!
