Bread Pudding

Ingredients

  • 2 slices bread (use bread that is only 1 point per slice such as Sara Lee 45 calorie bread)
  • 1 egg
  • 5 tablespoons unsweetened almond milk
  • 1 tablespoon granulated Splenda
  • 1/8 teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees F.
  • Cut bread into 1/2 inch pieces and add to a bowl.
  • Whisk together the egg, almond milk, Splenda and vanilla extract.
  • Pour the egg mixture over the bread. Stir to make sure all of the liquid is absorbed.
  • Spray a 10 oz. ramekin with no-stick cooking spray, then add the bread mixture.
  • Bake for 25 minutes. Enjoy!
