Beef Stew
Beef Stew is the ultimate comfort food!
It’s one of my favorite meals to make on a Sunday when it’s cold out.
Besides being filling it’s delicious and warms me up.

I do cheat a little and use a packet of stew seasoning, but I don’t make it according to the package directions.
Trying to pack as much flavor into this stew recipe but still keeping it light was my goal.
While the recipe itself is easy, the cook time is long. That ensures the meat will melt in your mouth.
How I kept this Beef Stew low in points:
Instead of using regular beef stew I bought a lean rib eye steak that I cut into 1 inch pieces.
I also packed this stew full of vegetables.
How to make this Beef Stew:
To start I cut the lean rib eye steak into 1 inch pieces and added it to a medium bowl.
Sprinkle with 2 tablespoons of all purpose flour and mix together.
Heat a large Dutch oven over medium heat and melt 1 tablespoon of light butter. Add the steak and brown on all sides.
Stir in the onion and garlic and let it cook 1 minute.
Add 4 cups of water and a bay leaf to the Dutch oven. Scrape up any brown bits from the bottom of the pan.
Bring to a simmer then put the lid on and simmer for 45 minutes.
Peel the carrots and potatoes, then cut into small pieces.
At the end of the 45 minutes add the carrots, potatoes, and seasoning packet.
Place the lid back on and simmer 30 minutes.
Add 2 splashes of Worcestershire sauce, the green beans and peas. Simmer for 15 minutes.
Then your delicious Beef Stew is ready! This is also a great meal prep recipe. It tastes just as good, if not better the next day.

Ingredients
- 1 lb. lean rib eye steak

- 1 tablespoon light butter
- 1 onion, sliced
- 1 clove garlic, minced
- 4 cups water
- 1 bay leaf
- 2 medium potatoes
- 2 carrots
- 1 1/2 cups green beans
- 1/2 cup peas
- 1 (1.5 ounce) packet McCormick beef stew seasoning mix
- 2 splashes Worcestershire sauce
- Salt and pepper, to taste
Instructions
- Cut the rib eye into 1 inch pieces. Add it to a medium bowl and sprinkle with all purpose flour. Mix together.
- Heat a large Dutch oven over medium heat. Melt the butter, add the steak and brown on all sides.
- Stir in the onion and garlic and let cook 1 minute.
- Add 4 cups of water and a bay leaf to the Dutch oven. Scrape any brown bits from the bottom of the pan.
- Bring to a simmer then put the lid on. Continue to simmer 45 minutes.
