BBQ Chicken Quesadillas

Ingredients

  • 2 Mission Carb Balance tortillas
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1/4 cup sugar-free BBQ sauce
  • 1/2 small red onion, sliced
  • 6 tablespoons reduced-fat cheddar cheese, shredded

Instructions

  • Preheat a nonstick frying pan over medium heat.
  • In a medium mixing bowl add the shredded chicken breast and sugar-free BBQ sauce. Stir together.
  • Take one tortilla and add half of the chicken to one side of the tortilla. Top the chicken with red onion, then half of the cheese.
  • Place the quesadilla in the pan and cook for 3-4 minutes on each side, until the cheese is melted and the tortilla is crispy.
  • Remove the quesadilla from the pan and cut it in half.
  • Repeat all of the steps with the second quesadilla, and serve warm.
