Baked Italian Meatballs

These meatballs are so TASTY! You can have 3 meatballs for only 1 point!

Plus they are filling. Pasta goes great with these meatballs. I had four meatballs, a half cup of pasta and 1/4 cup of spaghetti sauce. My whole meal was only 6 points!

Or you could go a little lower in carbs and serve the meatballs with a salad.

I used 96% lean ground beef for this recipe, specifically Laura’s lean beef. That helped to keep the meatballs low in points.

The other thing that’s great about these meatballs is they are easy to make. After you mix the ingredients the oven does the rest of the work. It’s the perfect weeknight meal.

They are also great leftover. My kids don’t like meatballs so whenever I make them I have plenty leftover. They’re perfect for lunch!

You could also make these Meatball Subs or Meatball Stuffed Shells with the leftover meatballs. Both are delicious and filling.

Baked Italian Meatballs

Yield: 24 meatballs

Ingredients

  • 1 egg
  • 1/4 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb. 96% lean ground beef (I used Laura's lean ground beef)

Instructions

  • Preheat oven to 400 degrees F.
  • Mix the first seven ingredients together in a large bowl. Add the ground beef to the mixture. Mix it up until it is all blended. Don’t be afraid to use your hands, it’s the best way!
  • Form into 24 – 3/4 to 1 inch balls. Place formed meatballs onto baking pan.
  • Bake in the oven for 13 minutes.
