Baked Chicken with Feta

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 3 1/2 oz. feta cheese
  • 2 cloves garlic, minced
  • 1/8 cup red onion, sliced
  • Salt and pepper, to taste
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon oregano
  • 1/8 teaspoon parsley
  • 1/8 teaspoon basil
  • 1/8 teaspoon thyme
  • Olive oil cooking spray

Instructions

  • Preheat oven to 400 degrees F.
  • In a medium mixing bowl add the tomatoes, feta cheese, red onion, and garlic. Season with salt and pepper, then mix together.
  • In a small bowl mix together the garlic powder, onion powder, oregano, parsley, basil, and thyme.
  • Spray a baking pan with olive oil spray. Add the chicken breasts and season them with salt and pepper. Also season the chicken with the garlic powder mix.
  • Pour the tomato mixture over the chicken.
  • Bake 25-30 minutes or until chicken has an internal temperature of 165 degrees F.
