Affordable Shrimp and Broccoli for Two

Ingredients

  • 10 oz. large shrimp (peeled, deveined, and thawed)
  • 1 crown broccoli
  • 4 lemon slices
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Preheat oven to 400 degrees F.
  • Add the olive oil to a medium sized bowl. Also add the minced garlic, onion powder, oregano, parsley, paprika, salt, and black pepper. Mix the ingredients together.
  • Add the shrimp to the bowl and use tongs to toss them and coat them in the seasoning.
  • Place two pieces of aluminum foil on a baking sheet and spray them with cooking spray. Add half of the shrimp to each piece of foil.
  • Cut the broccoli crown into bite-size pieces and add half to each piece of foil. Spray the broccoli with cooking spray and season it with salt and pepper.
  • Add two lemon slices to each foil packet then fold and seal it.
  • Place in the oven for 15-20 minutes or until shrimp has reached an internal temperature of 135-140 degrees F.
