30 Minute Cheese Tortellini Soup - Weight Watchers Freestyle

Ingredients

  • 1 cup carrots, sliced
  • 1/2 cup celery, sliced
  • 1/2 cup onion, chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon butter
  • 8 cups fat-free chicken broth
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • 10 oz. cheese tortellini
  • Salt and pepper to taste

Instructions

  • Melt butter in a large pot over medium heat. Add the carrots, celery, onion and garlic and cook about 5 minutes, or until tender.
  • Add the chicken broth, chicken, Italian seasoning and Parmesan cheese.
  • Bring to a boil, reduce heat and simmer 20 minutes.
  • Add the cheese tortellini the last 6 minutes of cooking time. Add salt and pepper.
